Chicken Breasts with Ginger and Curry

Quick and Healthy Chicken Supper with Noodles or Rice

Chicken Breasts with Ginger and Curry makes a quick and healthy meal for family or friends that gets you out of the kitchen in less than 30 minutes.

This is an extremely easy dish that is simple enough for supper but good enough for company. It can be served with rice, noodles or potatoes. Rice or noodles are best. Two very tasty and quite simple rice and noodle recipes are included. Either one goes very well with the chicken dish.

Ginger Curry Chicken Breasts

  • 4 boneless, skinless, chicken breasts
  • 2 tablespoons of olive oil
  • 1 1/2 cups of water
  • 3 teaspoons curry powder
  • 1 inch of fresh ginger root, grated
  • 1 can of cream of chicken soup
  • 1/2 cup of low fat milk

  1. Cut the chicken breasts into bite sized pieces and dry well.
  2. Heat the oil in a non-stick fry pan that has a lid.
  3. Brown the chicken pieces on all sides.
  4. Add one and a half cups of water to the pan along with the grated ginger and the curry powder. Mix well.
  5. Cook on low heat, covered, until the chicken is cooked through. About 10 to 15 minutes.
  6. Remove the lid and if there is a lot of liquid, cook until most of it is gone.
  7. In a bowl, beat the creamed soup with the half cup of low fat milk until it is smooth.
  8. Add to the pan and mix well. Stir until the chicken mixture is hot.
Confetti Rice is a simple, colourful dish that goes well with chicken or fish. It has a very delicate flavour that won’t over ride your meat dish.

Confetti Rice

  • 1 sweet red pepper seeded and chopped
  • 1 clove of garlic peeled and minced
  • 1 cup of fresh or frozen green peas
  • ½ cup of niblet corn
  • 1 large carrot grated to equal ½ cup
  • 3 cups of cooked rice, any kind
  • Oil for frying

  1. In a skillet heat olive or vegetable oil over medium heat.
  2. Add red pepper, grated carrot and garlic. Cook until the peppers are just barely soft.
  3. Add all other ingredients. Mix well and cook just until heated through.
  4. Serve hot with the prepared meat dish.
Rainbow Noodles, once again, is an easy dish to prepare and it goes well with chicken or fish. It can be served on the side where it looks very colourful or the prepared meat dish can be served on top of the noodles.

Rainbow Noodles

  • 1 package of egg noodles cooked per package instructions.
  • ½ of a sweet red pepper
  • ½ of a sweet green pepper
  • 1 large carrot shaved
  • 2 scallions with their tails
  • Generous teaspoon of a heart smart margarine.

  1. Seed the peppers and cut in half. Store half of each pepper for another time.
  2. Slice the peppers in very thin strips.
  3. Clean the carrot and shave it in long strips with a potato peeler.
  4. Wash and clean the scallions and slice them very thinly including as much of their tails as possible.
  5. In a non-stick pan add 1/3 cup of water and bring to a simmer. Add the vegetables. Steam cook until they are just barely soft.
  6. Have your cooked noodles hot in a warmed bowl.
  7. With a slotted spoon remove the vegetables and put them in with the noodles.
  8. Toss with a generous teaspoon of heart smart margarine till coated.
  9. Serve hot with the prepared meat dish.
